The History of Recipes
It is quite feasible to prove the history of recipes way back into distant history, in fact as far back into recorded history as early Egypt, and maybe further still. Interesting though that is, these, early recipes were just very simple pictorial instructions for meal preparation.
Interestingly, the most ancient recipe discovered so far, according to food historians are some clay tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. During Roman times 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes prepared by the Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into appetizers, entrees and afters, a very modern way of dining. Aspicius recounts how the cooks of his times used many aromatic flavours, including a few that will be familiar to modern cooks such as thyme, mint and parsley. During the succeeding few centuries, the upper-class families of the West strove to lay on the most extravagent meals, and because of this the best cooks and their recipe collections were at a premium. However, it was during the 1800s that formal cookery and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collating, trying out, and publishing the recipes that were being prepared for the better households. By the time we get to the twentieth century, cookery publications were starting to become popular mostly as a result of higher levels of literacy, people having more spare time and having more money to spend. Like it or not, the introduction of TV brings us celebrity TV chefs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing everyone to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
