The History of Recipes
It is possible to read the history of written recipes way back into ancient history, at least as far as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that is, sadly, these old cook books were just very basic hieroglyphic instructions for preparing food.
In fact, the oldest recipe in existence, according to food historians is a series of clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. Later on, in The time of the roman empire 25BC a man called Apicius compiled some documents describing recipes enjoyed by the Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into starters, main meal and dessert, something we still use today. This early Roman chef recounts how the cooks of Roman times made use of a good variety of aromatic flavours, including many that are still in use today for example bay, rue and dill. For the decades that followed, the wealthy families of Europe competed with each other to serve the most extravagent banquests, and as a consequence, the best cooks and their recipes could command a high salary. However, it was during the 19th century that fine cookery and recipe books really came of age. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to collecting, trying out, and recording the recipes of their peers. The TV revolution brought us TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to search through thousands of recipes like those on sites such as the one you are reading now. |
