The History of Recipes
Experts have proved the existence of recipes far back into distant history, at least as far back as the Egyptians, and quite possibly further than that. Interesting though that maybe, mostly, these old cook books were just basic hieroglyphic instructions for preparing food.
Fascinatingly, the oldest recipe in existence, according to experts are a few stone tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. As our culinary historical trip moves on a few more years we find two recipe books from the fourteenth century ; a recipe book published under the title `Forme of Cury`, and another called `Curye on Inglish`. Although the titles sound familiar, these have no connection with the curry that is familiar to us all today, but instead accounts of the types of meals served to the rich and powerful of those days. In the fifteenth century, people returning from the crusades brought back many foods, spices and herbs from Arab cooking, including spices like basil and coriander. The introduction of these new herbs and spices prompted an explosion in manuscripts on cooking, most of which are now in private cookery archives. Over the following few hundred years, the powerful and wealthy competed to offer the best banquets, and as a consequence, the best chefs and their recipe collections became highly prized. Even so, it wasn`t until the 19th century that cooking and recipe books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collating, trying out, and publishing recipes to help cooks of their time. The introduction of television gave us TV cookery programs and the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, allowing us all to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
