6 oz semisweet chocolate
1/2 cup light corn syrup
1/4 cup half and half or cream
1 tbsp unsalted butter
1/2 tsp vanilla extract
Directions
Coarsely chop the chocolate, then melt it over hot water in the top
of a doubler boiler along with the syrup. Mix well, and add
half-and-half. Blend well, and stir in the butter. Remove pan from
heat and add vanilla and mix.
Serve warm or allow to cool and refrigerate.
Makes about 1 1/2 cups

The History of Recipes
It is possible to track the history of `recipes` way back into the distant past, in fact as far back as the Egypt of the Pharoahs, and possibly even further than that. Having said that, sadly, these early cook books were just primitive pictorial recipes for preparing food.
During the time of the Roman Empire a roman called Apicius compiled a number of documents which described recipes prepared by wealthy roman citizens. In his works, he recounts how the roman meals were split into appetizers, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the ancient Romans made use of many different aromatic flavours, including many that are still in use today for example thyme, fennel and dill. Over the following few hundred years, the rich and powerful families of Wesstern Europe tried to lay on the most extravagent banquests, and consequentially cooks and their collection of recipes were much in demand. However, it was during the nineteenth century that haute cuisine and cookery books became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collating, trying out, and recording recipes of the day. The introduction of television brings us celebrity chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting everyone to search through thousands of recipes like those on our site. |
