The History of Recipes
Transcribed cooking instructions as an idea can be tracked back into distant history, at least as far as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, these, old cook books were just primitive hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe discovered so far, according to academics are some tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. As we move into The time of the roman empire around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes enjoyed by his fellow Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into starters, entrees and desserts, something we still use today. Additionally, he tells us how the chefs of Roman times used many spices, including some familiar names such as bay, mint and dill. Over the following few centuries, the wealthy families of Europe competed with each other to serve the most extravagent banquests, and because of this chefs and their recipes were at a premium. However, it was during the 1800s that fine cooking and recipe collections really came of age. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and writing down recipes for their fellow cooks to enjoy. The arrival of TV brought us cooking programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes like the ones you can find on this web site. |
