The History of Recipes
Recipes as a concept can be tracked far back into the distant past, in truth as far back into history as the early Egyptians, and maybe further still. Having said that, generally, these ancient cook books were just very simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the most ancient recipe in existence, according to historians are a few ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. Later on, in The time of the romans around 25BC a man called Apicius compiled a number of scripts describing recipes cooked by the Romans. In his works, he recounts how the meals were split into appetizers, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the Romans used many different herbs and spices, including some familiar names for example bay, fennel and dill. For the decades that followed, the wealthy families of Wesstern Europe competed with each other to lay on the most exotic banquets, and as a consequence, cooks and their collection of recipes became highly prized. However, it was during the 19th century that haute cuisine and recipe publications really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to assembling, verifying, and writing down the recipes of their peers. By the time we get to the 20th century, recipe publications are in high demand, mostly due to more people being able to read, people having more free time and disposable income. The arrival of television brought us cooking programs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to search through thousands of recipes like those on our web site. |
