The History of Recipes
Written recipes as a concept can be traced far back into antiquity, certainly as far back into history as the ancient Egyptians, and maybe even further. However, generally, these early cookbooks were just very basic hieroglyphic recipes for food preparation.
In an interesting twist, the oldest recipe discovered so far, according to experts in ancient history is a series of ancient tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. Much later, in Roman times a roman called Apicius wrote some scripts detailing recipes enjoyed by wealthy roman citizens. In his publication, he recounts how the meals of wealthy Romans were split into starters, main meal and dessert, something we still use today. Aspicius recounts how the ancient Romans made use of a good variety of spices, including a few that are still present in modern kitchens for example bay, rue and parsley. Continuing our culinary historical journey, we find a couple of recipe books which date from the 1300s : a book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Surprisingly, they are unconnected to the curry that is familiar to us all today, but rather descriptions of the types of food enjoyed by the nobility of the time. Later on, in the 15th century, people returning from the crusades brought back a variety of spices and herbs from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. These new foods and spices led to an eruption in publications on food, most of which are now in academic collections. When we get to the twentieth century, cook books are highly popular mostly due to higher levels of literacy, increased leisure time and a general increase in wealth. The TV revolution gave us TV cooks and the accompanying recipe books. And that brings us to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes such as those found on this recipe site. |
