The History of Recipes
We can trace the history of meal recipes back into ancient history, in truth as far back into recorded history as the Egyptians, and quite possibly further than that. Having said that, these, ancient cook books were just primitive hieroglyphic or cunieform recipes for preparing meals.
In fact, the most ancient recipe discovered, according to Professor Solomon Katz, is a collection of ancient tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. Later on, in Roman times around 25BC a man called Apicius compiled some documents which described recipes prepared by wealthy Romans. In his works, Apicius tells us how the roman meals were divided into appetizers, main course and dessert, a style of dining still practiced today. Aspicius informs us how the early Romans were skilled in the use of many different herbs and spices, including some familiar names such as basil, rue and parsley. Later on in the 1400s, knights returning from the crusades brought us many new foods, spices and herbs from the holy land, including spices like coriander, basil and rosemary. The introduction of these new herbs and spices led to an increase in recipe publications, many of which still exist in private collections. For the next few years, the wealthy families of Europe tried to lay on the best banquets, and consequentially the best chefs and their recipes were greatly in demand. Even so, it was during the nineteenth century that haute cuisine and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, verifying, and writing down the recipes that were being prepared for the better households. By the advent of the twentieth century, recipe books were increasing in popularity due to better eduction, people having increased spare time and being a little richer. The introduction of the TV brought us celebrity chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everybody to access massive numbers of recipes like those on our web site. |
