The History of Recipes
Written recipes as an idea can be traced far back into history, certainly as far as ancient Egypt, and maybe even further. However, generally, these ancient recipes were just basic hieroglyphic instructions for food preparation.
The truth of the matter is, the oldest recipe found, according to Professor Solomon Katz, are a few clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. As we move into Roman times around 25BC a roman called Apicius created a few scripts describing recipes enjoyed by his fellow Romans. In his publication, he recounts how the meals were divided into starters, entrees and afters, a very modern way of dining. This early Roman chef recounts how the ancient cooks were skilled in the use of many different aromatic flavors, including a few you will know like thyme, rue and asafoetida. During the following few centuries, the families of Europe competed with each other to serve the most extravagent meals, and as a result the best cooks and their recipe collections were highly sought after. Nevertheless, it was during the 1800s that formal cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to collating, trying out, and writing down recipes to allow everyone to enjoy them. By the advent of the 1900s, cookbooks were in high demand, mostly as a result of increased literacy, people having more spare time and being a little richer. |
