The History of Recipes
Historians have traced the existance of recipes far back into ancient history, in truth as far back as the ancient Egyptians, and maybe further still. In practice though, sadly, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the most ancient recipe discovered so far, according to academics is a collection of clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. During Roman times around 25BC a roman called Apicius created a collection of documents which described recipes cooked by wealthy roman citizens. In his publication, Apicius describes how the roman meals were separated into appetizers, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the ancient Romans made use of many spices and herbs, including a few that will be familiar to modern cooks for example bay, mint and dill. In the fifteenth century, people returning from the crusades brought us many new spices and herbs from middle-east cuisine, including coriander, parsley, basil and rosemary. These new culinary innovations created an explosion in books on cooking, the majority of which are now in private libraries. By the arrival of the 20th century, cookery books are starting to become popular mostly due to higher levels of literacy, people having more leisure time and having more disposable income. Like it or not, the introduction of television gave us celebrity TV chefs and the accompanying recipe books.
