The History of Recipes
Transcribed cooking instructions as an idea can be traced far back into the far past, in truth as far back into recorded history as the Egypt of the Pharoahs, and possibly even further. In practice though, in the main part, these early records were just primitive hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the most ancient recipe discovered so far, according to academics are some tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. During the time of the Romans a roman called Apicius created some documents which described recipes enjoyed by wealthy Romans. In his publication, he tells us how the meals were divided into starters, entrees and afters, a style of dining still practiced today. This early Roman chef describes how the chefs of Roman times made use of a wide range of spices, including a few that are still present in modern kitchens like basil, rue and dill. Moving our culinary historical trip onwards, we find a couple of interesting cookery books published in the 1300s ; a cookery book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are a little misleading though, they have no connection with the spicy food that is popular today, but instead recipes for the types of food enjoyed by the upper classes of that time. Later on, in the 15th century, people returning from the crusades brought back many new foods and spices from Arab cuisine, such as basil and coriander. The introduction of these new tastes was responsible for an outbreak in manuscripts on cookery, many of which are kept safe in private libraries. Over the next few hundred years, the powerful and rich tried to serve the most extravagent banquests, and because of this cooks and their recipe collections were much in demand. Notwithstanding that, it was during the 1800s the formal cooking and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, testing, and recording recipes to help cooks of their time. When we get to the 20th century, cookbooks are increasing in popularity as a result of higher levels of literacy, more free time and having more disposable income. |
