The History of Recipes
Recipes as an idea can be observed way back into ancient history, certainly as far back into recorded history as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that maybe, sadly, these old cookbooks were just primitive hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the oldest recipe discovered so far, according to academics are a few clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. As we move into The time of the romans 25BC a roman called Apicius created a number of documents describing recipes enjoyed by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvre, main course and desserts, something we still use today. This early Roman chef recounts how the Romans used many different spices, including a few you will know such as thyme, mint and parsley. Later, in the 15th century, people returning from the crusades brought back many foods and herbs from Arab cuisine, including basil and rosemary. These new foods and spices prompted a torrent in books on cookery, most of which are kept safe in private cookery archives. During the next few hundred years, the families of Europe competed with each other to serve the most extravagent meals, and because of this the best cooks and their collection of recipes were much in demand. Nevertheless, it wasn`t until the nineteenth century that cookery and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, testing, and publishing the recipes that were being prepared for the better households. By the time we get to the twentieth century, cookbooks were in high demand, mostly as a result of higher levels of literacy, people having more leisure time and having more disposable income. |
