The History of Recipes

Historians have tracked the existance of recipes back into the distant past, in fact as far back as the Egyptians, and maybe further still. Interesting though that maybe, these, ancient records were just very simple hieroglyphic recipes for preparing meals.

The truth of the matter is, the most ancient recipe in existence, according to food historians are a few clay tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful.

As we move into Roman times around 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into starters, main meal and dessert, something that is very familiar to us today. Aspicius also describes how the Romans were skilled in the use of a wide range of aromatic flavors, including some that we all recognise like bay, fennel and parsley.

Later, in the 15th century, knights returning from the crusades brought back many new spices and herbs from Arab cooking, including spices like parsley, basil and rosemary. These new culinary innovations was responsible for an eruption in publications on food, some of which are kept safe in private cookery archives.

During the following few centuries, the rich and powerful families of Europe strove to lay on the most exotic banquets, and as a consequence, the best chefs and their collection of recipes were at a premium. Notwithstanding that, it was during the 19th century that fine cookery and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, trying out, and writing down recipes that were common in the better off homes of the day.

By the advent of the 1900s, cookery publications are starting to become popular mostly due to more people being able to read, people having increased leisure time and having more money to spend.

The revolution that is television brings us celebrity TV chefs and the accompanying recipe books.

Which pretty much brings us to the present day and the internet revolution, permitting everyone to access massive numbers of recipes just like those on sites such as this.
