8 each egg whites
300 each gr caster sugar
300 each gr ground almonds or walnuts
FILLING
8 each egg yolks
8 tbsp spoons sugar
3 tbsp flour
100 each mls milk
100 each gr cocoa
200 each gr butter
Directions
Beat egg whites, add sugar slowly until hard and add almonds or
walnuts. Bake in moderate oven in lamington (long and thin) tin for
25-30 mins. Filling: Cook all ingredients except the butter in double
saucepan until thick. When cool, mix in creamed butter. Nick Guoth

The History of Recipes
We are able to track the history of `recipes` back into history, in fact as far into history as the early Egyptians, and maybe further still. In practice though, generally, these early recipes were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a series of tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. As we move into The time of the romans around 25BC a man called Apicius compiled a few documents showing how to cook the recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into starters, main meal and desserts, a style of dining still practiced today. Aspicius also describes how the ancient chefs used many different aromatic flavors, including a few that are still present in modern kitchens like bay, mint and dill. As we move on, there are some books from the 14th Century ; a recipe book called `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, they have no connection with the indian curry that is popular today, but rather recipes for the types of meals on the menus of the rich and powerful. Later, in the fifteenth century, the Crusaders brought back a variety of foods, spices and herbs from middle-east cuisine, including parsley and basil. These new culinary innovations was responsible for an explosion in books on cookery, many of which are now in private collections. During the next few centuries, the wealthy families of the West strove to serve up the best banquets, and because of this the best cooks and their recipe collections were highly sought after. Notwithstanding that, it was during the 19th century that fine cooking and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collating, trying out, and recording recipes to allow everyone to enjoy them. By the advent of the 20th century, recipe publications are greatly in demand due to higher levels of literacy, people having more spare time and being a little richer. The revolution that is television brought us TV chefs and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, permitting us all to search through thousands of recipes like those on sites such as this. |
