The History of Recipes
It is quite possible to track the history of recipes far back into the far past, at least as far into history as pharonic Egypt, and maybe further still. In practice though, generally, these old records were just very simple pictorial recipes for meal preparation.
Interestingly, the oldest recipe discovered, according to Professor Solomon Katz, are a few tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. During Roman times 25BC a roman called Apicius created some documents detailing recipes cooked by the Romans. He recounts how the roman meals were separated into hors d`oeuvres, main course and afters, something that is very familiar to us today. He also describes how the Roman cooks made use of a good variety of aromatic flavours, including a few that are still present in modern kitchens for example thyme, fennel and asafoetida. Later, in the 15th century, people returning from the crusades brought back many foods and herbs from the holy lands, including coriander, parsley, and basil. These new culinary innovations created an increase in manuscripts on cookery, some of which are kept safe in private libraries. During the succeeding few centuries, the powerful and rich competed to offer the most extravagent meals, and consequentially the best cooks and their recipes were highly sought after. Notwithstanding that, it wasn`t until the nineteenth century the formal cooking and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collecting, trying out, and recording the recipes of their peers. By the time we get to the twentieth century, cookbooks are in great demand, mostly as a result of better eduction, people having more spare time and being a little richer. Like it or not, the introduction of TV gave us TV cookery programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes such as those found on our site. |
