The History of Recipes
Written recipes as an idea can be tracked back into the distant past, in truth as far back into recorded history as the early Egyptians, and maybe further still. However, in the main part, these old records were just primitive hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the most ancient recipe discovered, according to experts are some tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Progressing into Roman times 25BC a man called Apicius assembled a number of scripts which described recipes enjoyed by wealthy Romans. In his works, he describes how the meals were split into starters, main meal and desserts, a style of dining still practiced today. He also informs us how the ancient cooks used a wide range of spices and herbs, including some that we all recognise like thyme, rue and parsley. Later on, in the 15th century, the Crusaders brought back many new foods, spices and herbs from the holy land, including parsley, basil and rosemary. These new herbs and spices was responsible for an explosion in books on cooking, many of which are kept safe in private collections. Over the succeeding few centuries, the powerful families of Wesstern Europe tried to serve the best banquets, and consequentially the best cooks and their collection of recipes became highly prized. Nevertheless, it was during the 19th century that fine cooking and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to assembling, testing, and recording recipes that were common in the better off homes of the day. When we get to the twentieth century, recipe publications were increasing in popularity due to better eduction, more leisure time and disposable income. The TV revolution brought us celebrity chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes just like those on this site. |
