The History of Recipes
Written cooking instructions as an idea can be found back into distant history, at least as far back as the ancient Egyptians, and maybe further still. However, in the main part, these ancient recipes were just simple hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the oldest recipe discovered so far, according to Professor Solomon Katz, is a series of stone tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. As we move into The time of the roman empire around 25BC a Roman scholar, called Apicius, assembled some scrolls detailing recipes cooked by wealthy Romans. In his publication, he tells us how the meals were split into appetizers, main meal and dessert, a very modern way of dining. This early Roman chef tells us how the ancient cooks used many spices, including many that are still in use today like basil, fennel and parsley. Moving our culinary historical trip onwards, there are two recipe books dating from the 14th Century : a recipe book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Surprisingly, these two books have no connection with the indian food that we all know today, but rather recipes for the types of meals prepared for the upper classes of that period. In the 15th century, knights returning from the crusades brought us many spices and herbs from middle-east cuisine, including parsley, basil and rosemary. These new herbs and spices created an explosion in recipe manuscripts, most of which still exist in private libraries. When we get to the 1900s, recipe publications are in great demand, mostly due to higher levels of literacy, people having more leisure time and being a little richer. The arrival of TV brought us TV cookery programs and the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes like the ones you can find on this web site. |
