The History of Recipes
Transcribed cooking instructions as an idea can be found far back into antiquity, in truth as far into history as pharonic Egypt, and possibly even further. Interesting though that is, mostly, these ancient recipes were just very basic pictorial instructions for meal preparation.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, is a series of stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. Progressing into Roman times 25BC a roman called Apicius wrote some documents which described recipes cooked by wealthy roman citizens. In his works, he recounts how the meals were separated into hors d`oeuvres, main course and afters, something that is very familiar to us today. Additionally, he informs us how the early Romans made use of a good variety of aromatic flavors, including a few that will be familiar to modern chefs for example basil, rue and parsley. Later on, in the 15th century, people returning from the crusades brought back many new foods and spices from the Middle-East, including spices such as coriander, parsley, and basil. These new foods and tastes created an increase in cookery books, some of which are now in private cookery archives. Over the succeeding few hundred years, the powerful and wealthy houses tried to offer the most extravagent banquests, and as a result chefs and their recipes were highly sought after. However, it wasn`t until the nineteenth century the formal cooking and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, trying out, and publishing recipes of the day. When we get to the twentieth century, cook books are starting to become popular as a result of increased literacy, more spare time and being a little richer. |
