The History of Recipes
Historians have traced the existence of recipes back into antiquity, in fact as far back into recorded history as early Egypt, and possibly even further. Interesting though that is, sadly, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the oldest recipe discovered, according to food historians are a few ancient tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. Closer to modern times, we have a couple of recipe books which date from the 14th Century : a cookery book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these two books are not about the indian curry that is popular today, but instead recipes for the types of food eaten by the nobility of that period. During the succeeding few hundred years, the rich families of Wesstern Europe competed to serve the most exotic meals, and consequentially cooks and their collection of recipes were at a premium. Nevertheless, it was during the nineteenth century that fine cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to assembling, testing, and publishing recipes that were common in the better off homes of the day. By the arrival of the 1900s, cooking publications were highly popular mostly due to better eduction, people having more free time and having more money to spend. |
