The History of Recipes
We can follow the history of meal recipes back into antiquity, in fact as far back into recorded history as the Egypt of the Pharoahs, and maybe further still. Having said that, mostly, these old records were just simple pictorial, hieroglyphic or cunieform recipes for preparing food.
In fact, the most ancient recipe discovered so far, according to food historians is a series of tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. Progressing into The time of the roman empire 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes prepared by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, a very modern way of dining. Additionally, he tells us how the Romans used many different aromatic flavors, including many that are still in use today for example thyme, mint and asafoetida. Later, there are a couple of books published in the 14th Century : a cookery book called `Forme of Cury`, and another, similary called `Curye on Inglish`. Don`t be fooled by the titles though, these are unconnected to the indian food that we all know today, but rather descriptions of the types of meals prepared for the rich people of that period. Later on in the 1400s, the Crusaders brought back many new foods and spices from middle-east cuisine, including basil and rosemary. The introduction of these new foods and spices prompted a torrent in recipe publications, the majority of which still exist in academic collections. The arrival of television brought us celebrity TV chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everyone to search through thousands of recipes like those on sites such as this. |
