The History of Recipes
Historians have traced the existence of recipes far back into ancient history, in fact as far back as early Egypt, and potentially, even further back. Having said that, generally, these ancient cookbooks were just primitive hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the most ancient recipe discovered so far, according to academics are a few ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful and blissful. Progressing into The time of the romans 25BC a roman called Apicius compiled some scripts showing how to cook the recipes cooked by wealthy roman citizens. In his scrolls, he recounts how the meals were split into starters, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the early Romans were skilled in the use of many spices, including a few that will be familiar to modern chefs like basil, mint and dill. As our culinary historical trip moves to more modern times there were some interesting books which were published in the fourteenth century ; a cookery book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, they are not about the indian food that is served today, but instead accounts of the types of food on the menus of the nobility of the period. In the 15th century, people returning from the crusades brought us a variety of foods and herbs from Arab cuisine, including spices like rosemary and coriander. The introduction of these new foods and spices was responsible for an increase in recipe publications, the majority of which are kept safe in private libraries. The introduction of television gave us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, permitting everybody to access massive numbers of recipes like the ones you can find on this web site. |
