The History of Recipes
It is quite possible to trace the history of written cooking instructions back into the far past, in truth as far into history as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that maybe, sadly, these old cookbooks were just very basic hieroglyphic instructions for preparing meals.
The truth of the matter is, the most ancient recipe in existence, according to food historians are a few tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Later on, in The time of the roman empire around 25BC a Roman scholar, called Apicius, assembled some scrolls showing how to cook the recipes cooked by wealthy Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into starters, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the cooks of his times used many herbs and spices, including a few that will be familiar to modern chefs such as bay, mint and dill. As we move on, there are some books which appeared in the 1300s ; a book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. The titles are a little misleading though, they are not about the spicy food that is served today, but rather recipes for the types of food eaten by the upper classes of that period. Later, in the fifteenth century, knights returning from the crusades brought us a variety of foods and herbs from Arab cooking, including spices such as parsley and basil. The introduction of these new tastes was responsible for an increase in books on cooking, the majority of which are now in private collections. By the advent of the 20th century, recipe publications are greatly in demand mostly as a result of more people being able to read, more spare time and having more money to spend. |
