The History of Recipes
We are able to track the history of written recipes way back into antiquity, in truth as far into history as the Egypt of the Pharoahs, and potentially, even further back. In practice though, generally, these ancient recipes were just simple hieroglyphic recipes for food preparation.
As we move into The time of the romans around 25BC a roman called Apicius compiled a few scripts which described recipes cooked by wealthy Romans. In his publication, Apicius recounts how the meals were separated into starters, main course and afters, something we still use today. Additionally, he tells us how the cooks of Roman times were skilled in the use of many different aromatic flavors, including many that are still in use today such as bay, mint and asafoetida. Later, in the fifteenth century, people returning from the crusades brought us many new foods and spices from Arab cooking, including spices like basil and rosemary. These new culinary innovations was responsible for a torrent in cookery books, most of which are now in private libraries. By the advent of the 20th century, cookery books were starting to become popular as a result of more people being able to read, people having increased leisure time and being a little richer. |
