The History of Recipes
Food historians have tracked the existence of recipes far back into antiquity, in fact as far into history as early Egypt, and possibly even further than that. In practice though, these, old cook books were just basic pictorial recipes for preparing food.
Later on, in The time of the roman empire 25BC a roman called Apicius created some scripts describing recipes cooked by his fellow Romans. In his scrolls, he describes how the roman meals were split into hors d`oeuvres, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the ancient chefs made use of many spices, including a few that will be familiar to modern cooks for example bay, fennel and asafoetida. Later, in the fifteenth century, people returning from the crusades brought back many foods and herbs from the East, including spices like rosemary and coriander. These new spices and herbs caused an increase in cookery books, some of which are now in private cookery archives. By the time we get to the 1900s, cookbooks are in high demand, mostly as a result of increased literacy, people having increased free time and disposable income. |
