The History of Recipes
It is possible to follow the history of meal recipes back into history, in fact as far back into recorded history as ancient Egypt, and possibly even further than that. However, sadly, these ancient recipes were just basic pictorial instructions for meal preparation.
Fascinatingly, the oldest recipe found, according to experts is a collection of tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. As we move into The time of the roman empire around 25BC a man called Apicius compiled a few documents describing recipes cooked by the Romans. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, main course and afters, something that is very familiar to us today. He also recounts how the early Romans were skilled in the use of many spices and herbs, including some familiar names such as thyme, fennel and asafoetida. Moving our culinary historical trip onwards, there are a couple of interesting recipe books which date from the 1300s : a recipe book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, these are not about the spicy food that appears on menues today, but instead accounts of the types of food enjoyed by the upper classes of those days. In the 15th century, the Crusaders brought back many spices and herbs from the East, including spices such as basil and rosemary. These new culinary innovations prompted a torrent in cookery books, some of which are now in private cookery archives. When we get to the 1900s, cooking books were in high demand, mostly due to increased literacy, increased leisure time and disposable income. The arrival of TV brought us cooking programs and the recipe books that accompanied them. And that neatly brings us to the present day and the internet revolution, permitting everybody to access massive numbers of recipes like the ones you can find on this site. |
