The History of Recipes
We can read the history of meal recipes back into the distant past, in truth as far back as the ancient Egyptians, and quite possibly further than that. Interesting though that is, generally, these old cookbooks were just primitive hieroglyphic recipes for meal preparation.
Interestingly, the most ancient recipe discovered, according to historians are some stone tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful and blissful. As we move into The time of the romans 25BC a man called Apicius compiled a few scripts showing how to cook the recipes enjoyed by wealthy Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, something that is very familiar to us today. This early Roman chef tells us how the early Romans were skilled in the use of many aromatic flavors, including some that we all recognise such as thyme, mint and dill. Closer to modern times, there are a couple of books which date from the 14th Century ; one book titled `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are a little misleading though, these have no connection with the indian food that appears on menues today, but instead recipes for the types of food prepared by the chefs of the rich and powerful of the period. Later, in the 15th century, knights returning from the crusades brought us a variety of spices and herbs from the holy lands, including basil and coriander. The introduction of these new tastes prompted an outbreak in recipe manuscripts, some of which are now in private collections. During the next few hundred years, the wealthy families of Wesstern Europe strove to serve the most exotic meals, and consequentially the best cooks and their recipe collections were much in demand. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collating, trying out, and writing down the recipes that were being prepared for the better households. By the time we get to the twentieth century, recipe publications are greatly in demand mostly due to better eduction, people having more leisure time and having more money. Like it or not, the introduction of TV brought us TV chefs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to access thousands of recipes like the ones you can find on sites such as this. |
