The History of Recipes
Recipes as a concept can be traced back into history, in truth as far as ancient Egypt, and maybe further still. In practice though, generally, these old cook books were just very basic pictorial instructions for food preparation.
In an interesting twist, the most ancient recipe discovered, according to food historians are some clay tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Continuing our culinary historical journey, there are two interesting cookery books which date from the 14th Century - a book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are a little misleading though, these two books have no connection with the indian curry that is popular today, but rather accounts of the types of meals served to the rich and wealthy people of the period. Later on, in the 15th century, the Crusaders brought back many new spices and herbs from the holy land, including coriander, basil and rosemary. These new culinary innovations led to an outbreak in recipe books, many of which are now in private cookery archives. Over the succeeding few hundred years, the wealthy families of Wesstern Europe tried to lay on the most exotic meals, and consequentially the best cooks and their recipes could command a high salary. Notwithstanding that, it was during the 1800s that cookery and recipe collections became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, verifying, and publishing recipes that were common in the better off homes of the day. When we get to the twentieth century, recipe publications are increasing in popularity mostly due to better eduction, people having more leisure time and having more money to spend. The TV revolution brought us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes such as those found on this web site. |
