The History of Recipes
We are able to read the history of meal recipes far back into ancient history, in truth as far as pharonic Egypt, and possibly even further than that. However, these, old cook books were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
As we move into The time of the roman empire 25BC a roman called Apicius compiled a collection of scripts which described recipes prepared by wealthy Romans. In his works, he recounts how the meals were separated into hors d`oeuvre, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the Romans made use of many different spices, including some that we all recognise for example thyme, fennel and asafoetida. Over the next few centuries, the rich and powerful families of Europe tried to lay on the best banquets, and as a consequence, the best cooks and their collection of recipes became highly prized. However, it wasn`t until the 1800s the formal cooking and cookery books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collating, testing, and recording the recipes of their peers. By the arrival of the twentieth century, cookery publications are increasing in popularity due to more people being able to read, people having more spare time and disposable income. |
