The History of Recipes
We can track the history of written recipes way back into distant history, in truth as far back into history as the early Egyptians, and possibly even further than that. Interesting though that is, generally, these early records were just primitive pictorial recipes for food preparation.
In fact, the most ancient recipe discovered so far, according to food historians is a collection of clay tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. Progressing into Roman times around 25BC a roman called Apicius assembled a few documents which described recipes enjoyed by wealthy roman citizens. In his publication, he tells us how the roman meals were separated into hors d`oeuvres, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the Romans were skilled in the use of a good variety of aromatic flavours, including a few that are still present in modern kitchens such as thyme, fennel and asafoetida. Later on in the 1400s, knights returning from the crusades brought back many new spices and herbs from Arab cuisine, such as coriander, parsley, and rosemary. The introduction of these new culinary ideas caused an eruption in recipe publications, the majority of which still exist in private libraries. For the next few years, the upper-class families of Wesstern Europe tried to serve the most exotic banquets, and because of this cooks and their recipes could command a high salary. However, it wasn`t until the 19th century that haute cuisine and cookery books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collecting, trying out, and recording the recipes that were being prepared for the better households. The introduction of the TV brings us celebrity chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everybody to access thousands of recipes such as those found on sites such as the one you are reading now. |
