The History of Recipes
Academics have traced the existance of recipes back into the distant past, at least as far back into history as the ancient Egyptians, and possibly even further. Interesting though that maybe, generally, these old cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe in existence, according to historians are some stone tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. During Roman times around 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were split into starters, entrees and desserts, a style of dining still practiced today. Aspicius recounts how the Romans made use of a good variety of herbs, including a few that will be familiar to modern cooks like thyme, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought back a variety of spices and herbs from Arab cooking, including basil and rosemary. These new herbs and spices was responsible for an outbreak in cookery books, many of which are now in private libraries. By the arrival of the 20th century, cookery publications were greatly in demand mostly due to more people being able to read, people having increased free time and having more money. Like it or not, the introduction of television brings us TV chefs and the recipe books that accompanied them. And that pretty much brings us to the present day and the internet revolution, permitting everyone to search through massive numbers of recipes such as those found on the site you are now reading. |
