The History of Recipes
Academics have tracked the existance of recipes way back into the far past, in fact as far back as the ancient Egyptians, and possibly even further than that. However, mostly, these old cookbooks were just primitive hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some ancient tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. As our culinary historical trip moves on a few more years we have some interesting books which date from the 14th Century ; one book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Surprisingly, these two books are not about the indian food that is served today, but rather recipes for the types of food enjoyed by the upper classes of the period. During the succeeding few hundred years, the upper-class families of Europe strove to offer the most exotic meals, and because of this cooks and their recipe collections were greatly in demand. Nevertheless, it was during the nineteenth century that fine cookery and cookery books became really popular. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, trying out, and writing down recipes that were common in the better off homes of the day. By the arrival of the 1900s, cooking books are greatly in demand mostly due to higher levels of literacy, people having more free time and being a little richer. Like it or not, the introduction of television brings us TV chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes such as those found on sites such as the one you are reading now. |
