1 qt cucumbers
1 1/2 cup brown sugar
1/2 tbsp stick cinnamon
1/2 tbsp celery seed
1 cup vinegar
1 cup water
1/2 tbsp whole allspice
1/2 tbsp mustard seed
Directions
Select fresh, crisp cucumbers. Cover with a brine made by dissolving
2 tablespoons salt in 1 quart water. Let stand overnight. Drain.
Wash. Soak overnight in clear water. Wipe dry. Cut in chunks. Cook
in weak vinegar until tender. Pack loosely in sterilized jars. Cover
with a pickling sirup made from remaining ingredients. The Household

The History of Recipes
Experts have proved the existance of recipes far back into the distant past, certainly as far into history as pharonic Egypt, and maybe further still. Having said that, generally, these old cook books were just basic hieroglyphic instructions for preparing food.
The truth of the matter is, the oldest recipe discovered so far, according to experts in ancient history are some ancient tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `wonderful`. As we move into The time of the romans around 25BC a roman called Apicius created a number of documents detailing recipes enjoyed by his fellow Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvre, entrees and afters, a very modern way of dining. Aspicius also describes how the ancient cooks made use of a wide range of spices and herbs, including some familiar names for example bay, rue and parsley. As we move on, we find two recipe books from the fourteenth century ; a book titled `Forme of Cury`, and another called `Curye on Inglish`. Although the titles sound familiar, these are nothing to do with the spicy food that we all know today, but instead descriptions of the types of meals prepared by the cooks of the upper classes of the time. Later, in the fifteenth century, people returning from the crusades brought us a variety of foods, spices and herbs from middle-east cuisine, including spices like parsley and basil. These new spices and herbs prompted an outbreak in cookery books, the majority of which are kept safe in private collections. The revolution that is television gave us TV cooks and the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes just like those on this site. |
