The History of Recipes
We can follow the history of `recipes` far back into ancient history, in truth as far back into recorded history as the ancient Egyptians, and maybe even further. Having said that, these, ancient recipes were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
In fact, the most ancient recipe in existence, according to academics is a collection of stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a roman called Apicius compiled some scripts which described recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the roman meals were divided into starters, main meal and desserts, something that is very familiar to us today. He also recounts how the Romans used many spices, including a few that are still present in modern kitchens for example thyme, fennel and asafoetida. Later, there were a couple of interesting cookery books which date from the 1300s - a cookery book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Don`t be fooled by the titles though, they are unconnected to the indian curry that appears on menues today, but rather accounts of the types of meals on the tables of the rich and powerful of that period. Later on in the 1400s, people returning from the crusades brought us many new spices and herbs from Arab countries, including spices such as coriander, parsley, and basil. These new culinary innovations was responsible for an eruption in books on cookery, some of which still exist in private cookery archives. For the centuries that followed, the rich and powerful families of the West tried to serve the most exotic banquets, and as a consequence, chefs and their recipes were at a premium. Notwithstanding that, it was during the 19th century that fine cooking and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collating, testing, and recording recipes of the day. By the time we get to the 20th century, cookery books were increasing in popularity mostly due to more people being able to read, leisure time and having more disposable income. The introduction of the TV gave us celebrity chefs and the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, permitting everybody to search through thousands of recipes like the ones you can find on this web site. |
