The History of Recipes
It is quite feasible to follow the history of written cooking instructions way back into the distant past, certainly as far into history as ancient Egypt, and possibly even further than that. Interesting though that is, generally, these ancient records were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe found, according to academics are some stone tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. As we move into The time of the romans 25BC a man called Apicius assembled a collection of scripts describing recipes cooked by the Romans. In his works, he recounts how the roman meals were split into starters, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the ancient Romans used many different herbs, including some familiar names such as thyme, fennel and asafoetida. Later, in the 15th century, the Crusaders brought back many spices and herbs from the Middle-East, such as coriander, parsley, basil and rosemary. The introduction of these new culinary ideas was responsible for an explosion in recipe manuscripts, the majority of which are kept safe in private collections. During the succeeding few centuries, the powerful families of the West competed with each other to lay on the most exotic meals, and as a result cooks and their collection of recipes were much in demand. However, it was during the 19th century that haute cuisine and cookery books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collating, verifying, and writing down the recipes that were being prepared for the better households. The arrival of TV brings us TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes such as those found on sites such as the one you are reading now. |
