The History of Recipes
Transcribed cooking instructions as a concept can be tracked way back into antiquity, in truth as far into history as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that maybe, sadly, these old cook books were just simple pictorial recipes for meal preparation.
Interestingly, the most ancient recipe found, according to food historians are a few tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. As our culinary historical trip moves on a few more years we find a couple of interesting cookery books which appeared in the 1300s : a book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Although the titles sound familiar, these two books are nothing to do with the curry that is popular today, but rather accounts of the types of food on the menus of the upper classes of the period. In the fifteenth century, people returning from the crusades brought back many new foods and herbs from the East, including spices such as basil and rosemary. The introduction of these new herbs and spices led to an outbreak in manuscripts on food, many of which still exist in private libraries. During the succeeding few hundred years, the powerful and wealthy houses tried to serve the most exotic meals, and as a result chefs and their collection of recipes could command a high salary. Even so, it was during the 1800s that formal cookery and recipe collections really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collecting, verifying, and publishing recipes to help cooks of their time. By the arrival of the 1900s, cook books are increasing in popularity mostly as a result of increased literacy, increased leisure time and having more money to spend. Like it or not, the introduction of television gave us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to search through thousands of recipes such as those found on the site you are now reading. |
We hope you enjoy this Chunky Con Queso recipe.
