The History of Recipes
We can read the history of `recipes` way back into history, in fact as far as early Egypt, and quite possibly further than that. Interesting though that is, these, ancient cookbooks were just primitive pictorial instructions for food preparation.
In fact, the most ancient recipe found, according to historians is a series of clay tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. Later on, there were a couple of books which were published in the fourteenth century ; one book called `Forme of Cury`, and another, similary called `Curye on Inglish`. Despite their titles, these books are not about the indian food that appears on menues today, but instead descriptions of the types of meals on the menus of the rich and powerful of those days. Later, in the 15th century, knights returning from the crusades brought back a variety of spices and herbs from Arab cuisine, including rosemary and coriander. The introduction of these new culinary ideas created an increase in recipe manuscripts, some of which are kept safe in academic collections. During the following few centuries, the upper-class families of Wesstern Europe competed to serve the most exotic meals, and because of this the best cooks and their recipe collections increased in prestige. However, it wasn`t until the nineteenth century that fine cookery and recipe publications reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to assembling, trying out, and recording recipes for their fellow cooks to enjoy. By the advent of the 1900s, cookery publications were highly popular mostly due to higher levels of literacy, people having more leisure time and a general increase in wealth. Like it or not, the introduction of TV brings us TV cooks and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, allowing us all to search through thousands of recipes just like those on sites such as this. |
