The History of Recipes
Historians have tracked the existence of recipes back into history, certainly as far into history as the Egyptians, and potentially, even further back. However, generally, these ancient recipes were just primitive hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the oldest recipe found, according to Professor Solomon Katz, are a few clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. As we move into The time of the roman empire 25BC a man called Apicius compiled a few scripts describing recipes cooked by his fellow Romans. In his publication, he recounts how the meals were divided into appetizers, main course and desserts, a style of dining still practiced today. Aspicius also recounts how the Romans used many different spices, including some familiar names for example thyme, rue and asafoetida. As our culinary historical trip moves to more modern times there are a couple of interesting recipe books from the fourteenth century - a recipe book published under the title `Forme of Cury`, and another called `Curye on Inglish`. Surprisingly, these two books are unconnected to the indian curry that is popular today, but instead accounts of the types of meals on the menus of the rich people of the time. In the 15th century, the Crusaders brought back many foods, spices and herbs from the East, including spices like coriander, parsley, and basil. These new foods and spices led to a torrent in books on cooking, many of which are kept safe in private cookery archives. The introduction of television brought us cooking programs and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to access thousands of recipes like those on this recipe site. |
