The History of Recipes
We can trace the history of written recipes way back into history, in fact as far back as pharonic Egypt, and maybe further still. Interesting though that is, these, early cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Later on, in Roman times around 25BC a roman called Apicius compiled a collection of documents showing how to cook the recipes cooked by his fellow Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the ancient cooks were skilled in the use of a good variety of herbs and spices, including a few that will be familiar to modern cooks like basil, rue and parsley. For the next few years, the upper-class families of the West strove to offer the most extravagent meals, and as a result the best cooks and their recipes were at a premium. However, it wasn`t until the nineteenth century that haute cuisine and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collecting, verifying, and publishing recipes to allow everyone to enjoy them. The introduction of the TV brings us TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing us all to access massive numbers of recipes such as those found on our web site. |
