The History of Recipes
Written cooking instructions as an idea can be found back into ancient history, in truth as far as early Egypt, and quite possibly further than that. In practice though, in the main part, these old cookbooks were just simple hieroglyphic recipes for preparing meals.
In an interesting twist, the most ancient recipe in existence, according to historians are a few stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. As we move into The time of the roman empire around 25BC a man called Apicius created some documents which described recipes prepared by wealthy Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, a very modern way of dining. Additionally, he recounts how the Roman cooks were skilled in the use of many spices, including a few that will be familiar to modern cooks like bay, rue and parsley. Over the next few hundred years, the rich families of the West tried to lay on the most extravagent meals, and as a consequence, the best chefs and their collection of recipes were much in demand. Notwithstanding that, it wasn`t until the 1800s the formal cooking and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collecting, testing, and publishing recipes to allow everyone to enjoy them. When we get to the 1900s, cooking publications were increasing in popularity mostly as a result of more people being able to read, people having increased free time and having more money. The arrival of TV brings us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to access thousands of recipes like the ones you can find on this web site. |
