The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions back into the distant past, at least as far into history as the Egyptians, and potentially, even further back. However, sadly, these ancient recipes were just very simple pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe found, according to experts in ancient history is a collection of clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. Progressing into The time of the romans around 25BC a man called Apicius assembled a number of scripts detailing recipes cooked by his fellow Romans. In his publication, Apicius tells us how the meals were divided into appetizers, main course and desserts, something that is very familiar to us today. Additionally, he tells us how the Romans used a good variety of aromatic flavors, including some that we all recognise like thyme, fennel and dill. During the next few hundred years, the powerful families of Wesstern Europe competed to offer the best banquets, and as a result the best chefs and their recipe collections increased in prestige. Nevertheless, it was during the nineteenth century that fine cooking and recipe publications became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collecting, trying out, and writing down recipes to help cooks of their time. Like it or not, the introduction of TV brought us TV cookery programs and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everyone to access thousands of recipes such as those found on sites such as this. |
