The History of Recipes
Historians have traced the existence of recipes way back into the far past, at least as far as the ancient Egyptians, and quite possibly further than that. Interesting though that maybe, mostly, these ancient records were just simple pictorial recipes for food preparation.
Fascinatingly, the oldest recipe in existence, according to Professor Solomon Katz, are a few ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. Progressing into The time of the romans 25BC a roman called Apicius assembled a collection of scripts describing recipes enjoyed by wealthy roman citizens. In his scrolls, he tells us how the meals were split into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. He also informs us how the cooks of his times made use of a wide range of aromatic flavors, including a few that will be familiar to modern cooks for example thyme, rue and parsley. In the 15th century, knights returning from the crusades brought back many spices and herbs from Arab countries, including parsley, basil and rosemary. The introduction of these new herbs and spices created a surge in recipe publications, many of which are kept safe in private libraries. The introduction of television brings us cooking programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes just like those on sites such as this. |
