The History of Recipes
Food historians have traced the existance of recipes way back into antiquity, in truth as far back into recorded history as ancient Egypt, and possibly even further. Interesting though that maybe, in the main part, these early cookbooks were just simple pictorial instructions for meal preparation.
During Roman times around 25BC a roman called Apicius compiled a few scripts which described recipes prepared by the Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvre, main course and desserts, a style of dining still practiced today. Aspicius also informs us how the Roman cooks were skilled in the use of a good variety of herbs and spices, including some that we all recognise for example bay, mint and parsley. During the succeeding few hundred years, the rich and powerful families of Wesstern Europe tried to lay on the most exotic meals, and consequentially cooks and their recipe collections were at a premium. Even so, it wasn`t until the nineteenth century that cookery and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collecting, verifying, and writing down recipes common in their social group. By the arrival of the 1900s, cookery books were increasing in popularity mostly due to better eduction, more free time and having more money to spend. |
