The History of Recipes
It is quite possible to follow the history of written cooking instructions back into the far past, in fact as far back into recorded history as the early Egyptians, and maybe further still. Interesting though that maybe, sadly, these ancient records were just very basic hieroglyphic recipes for food preparation.
Later on, in The time of the romans 25BC a roman called Apicius wrote a few documents describing recipes enjoyed by wealthy Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvres, entrees and desserts, something we still use today. This early Roman chef describes how the Romans used many herbs, including a few that are still present in modern kitchens like thyme, fennel and parsley. Over the succeeding few centuries, the powerful and wealthy competed with each other to serve up the most exotic banquets, and because of this chefs and their collection of recipes were at a premium. Even so, it wasn`t until the 1800s that cookery and recipe books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collecting, verifying, and recording recipes to help cooks of their time. When we get to the 20th century, cook books were in high demand, mostly due to higher levels of literacy, increased leisure time and having more money to spend. |
