The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into ancient history, in fact as far back into recorded history as the early Egyptians, and maybe further still. In practice though, sadly, these early recipes were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the most ancient recipe found, according to experts in ancient history is a collection of ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. Later on, in The time of the romans 25BC a roman called Apicius compiled some scripts showing how to cook the recipes enjoyed by wealthy Romans. He tells us how the meals of wealthy Romans were divided into appetizers, main course and dessert, a very modern way of dining. Aspicius informs us how the Romans were skilled in the use of many aromatic flavors, including a few you will know such as thyme, fennel and asafoetida. Over the succeeding few centuries, the rich and powerful families of the West strove to serve the most exotic banquets, and as a result the best cooks and their recipes could command a high salary. Notwithstanding that, it was during the nineteenth century that formal cookery and recipe books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collating, trying out, and writing down recipes for their fellow cooks to enjoy. When we get to the 20th century, cookery books were greatly in demand due to increased literacy, people having more leisure time and a general increase in wealth. |
