The History of Recipes
Historians have proved the existence of recipes back into the distant past, at least as far back into history as early Egypt, and quite possibly further than that. Interesting though that maybe, mostly, these early recipes were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a collection of stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. As we move into The time of the roman empire around 25BC a roman called Apicius assembled a collection of scripts showing how to cook the recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the meals were split into appetizers, main course and desserts, a very modern way of dining. Aspicius informs us how the cooks of his times were skilled in the use of many spices and herbs, including a few you will know such as basil, rue and parsley. In the 15th century, knights returning from the crusades brought back a variety of foods and herbs from Arab cuisine, including spices such as coriander, parsley, and rosemary. The introduction of these new herbs and spices led to an increase in recipe books, the majority of which are now in private cookery archives. The arrival of TV brings us TV chefs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes like the ones you can find on this site. |
