The History of Recipes
Written recipes as an idea can be traced back into distant history, at least as far back into history as the ancient Egyptians, and possibly even further. Interesting though that maybe, generally, these old recipes were just basic pictorial instructions for preparing meals.
In an interesting twist, the oldest recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Later on, in The time of the romans 25BC a man called Apicius compiled some documents describing recipes prepared by wealthy roman citizens. In his publication, he describes how the meals were separated into hors d`oeuvre, entrees and desserts, a very modern way of dining. This early Roman chef describes how the early Romans were skilled in the use of many different herbs, including a few that will be familiar to modern cooks such as basil, mint and parsley. Continuing our culinary historical journey, we have a couple of interesting books which date from the 1300s : one book called `Forme of Cury`, and another titled `Curye on Inglish`. Amusingly, these are nothing to do with the indian curry that we all know today, but instead recipes for the types of food cooked for the rich and wealthy people of the period. Later on, in the 15th century, knights returning from the crusades brought us many spices and herbs from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. These new spices and herbs prompted an outbreak in books on cooking, most of which are now in private collections. When we get to the 20th century, recipe books were in great demand, mostly due to higher levels of literacy, increased leisure time and being a little richer. |
