The History of Recipes
Food historians have proved the existance of recipes way back into history, in fact as far into history as pharonic Egypt, and quite possibly further than that. In practice though, mostly, these old cookbooks were just very simple hieroglyphic instructions for preparing food.
Fascinatingly, the most ancient recipe in existence, according to experts is a collection of stone tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. As our culinary historical trip moves on a few more years there were some interesting books which were published in the fourteenth century : a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these books have no connection with the indian curry that appears on menues today, but rather accounts of the types of food served to the rich and powerful of the period. In the fifteenth century, people returning from the crusades brought us a variety of foods and herbs from Arab countries, including parsley, basil and rosemary. The introduction of these new tastes created an explosion in books on cooking, some of which are now in private cookery archives. Over the following few hundred years, the rich and powerful families of Europe strove to serve up the most extravagent meals, and as a consequence, the best cooks and their collection of recipes became highly prized. However, it wasn`t until the 19th century that fine cooking and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to assembling, verifying, and writing down the recipes of their peers. Like it or not, the introduction of television brings us TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to search through thousands of recipes like those on our web site. |
