The History of Recipes
Transcribed cooking instructions as a concept can be traced back into the distant past, at least as far back as pharonic Egypt, and maybe even further. However, these, old cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
During the time of the Romans a man called Apicius assembled a number of scripts detailing recipes enjoyed by his fellow Romans. In his works, he recounts how the meals of wealthy Romans were split into appetizers, entrees and desserts, something we still use today. This early Roman chef describes how the Roman chefs were skilled in the use of a good variety of herbs, including some that we all recognise for example thyme, mint and dill. Over the next few hundred years, the powerful families of Wesstern Europe competed to serve up the most extravagent meals, and because of this chefs and their collection of recipes could command a high salary. Nevertheless, it was during the 1800s the formal cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collecting, verifying, and writing down recipes of the day. When we get to the 20th century, recipe publications were highly popular as a result of higher levels of literacy, leisure time and a general increase in wealth. |
