The History of Recipes
We are able to track the history of written recipes far back into the distant past, in fact as far back into recorded history as early Egypt, and possibly even further than that. Having said that, these, old cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Interestingly, the oldest recipe found, according to historians is a series of stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. As we move into The time of the romans 25BC a man called Apicius compiled some scripts describing recipes cooked by wealthy roman citizens. In his works, Apicius recounts how the meals were separated into hors d`oeuvres, main meal and dessert, a very modern way of dining. Aspicius informs us how the early Romans were skilled in the use of a wide range of aromatic flavors, including a few that are still present in modern kitchens such as thyme, mint and parsley. Later, in the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the East, including parsley, basil and rosemary. These new spices and herbs created an eruption in recipe manuscripts, most of which are kept safe in private libraries. During the succeeding few centuries, the rich families of Europe competed with each other to lay on the best banquets, and as a result the best cooks and their collection of recipes were much in demand. Even so, it wasn`t until the 19th century that haute cuisine and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to assembling, trying out, and recording recipes for their fellow cooks to enjoy. Like it or not, the introduction of TV brought us cooking programs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everybody to access massive numbers of recipes just like those on sites such as this. |
