The History of Recipes
Recipes as a concept can be tracked back into the far past, in fact as far back as pharonic Egypt, and possibly even further. Having said that, in the main part, these old cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the most ancient recipe found, according to food historians are a few stone tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Continuing our culinary historical journey, we have some interesting books which were published in the 1300s - a book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Don`t be fooled by the titles though, these are unconnected to the spicy food that appears on menues today, but instead descriptions of the types of meals eaten by the rich. Over the succeeding few hundred years, the rich families of Wesstern Europe strove to offer the most extravagent banquests, and as a result chefs and their recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century the formal cooking and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, verifying, and publishing the recipes that were being prepared for the better households. When we get to the twentieth century, cooking publications are greatly in demand as a result of increased literacy, more spare time and having more money to spend. |
