3/4 cup skim or 2% milk
1 cup oatmeal, uncooked
1/2 cup vegetable oil
2 egg whites
1/2 cup brown sugar
1/2 tsp cinnamon
3 tsp baking powder
1 cup flour
1 tbsp grated orange zest
Directions
Peeled and chopped bits of apple, optional
Preheat oven to 400 F. Line 12 muffin cups with paper liners. Combine
and mix milk and oatmeal. Add oil and egg whites, sugar and spice and
zest. Stir until blended. Combine flour and baking powder, add to
mixture, along with apple bits and stir just until blended. Bake
15-18 minutes. Makes 12 muffins.

The History of Recipes
We can read the history of `recipes` far back into the far past, in fact as far back into history as the early Egyptians, and maybe even further. Having said that, mostly, these old cook books were just basic pictorial recipes for preparing meals.
Later on, in Roman times around 25BC a roman called Apicius created a number of documents showing how to cook the recipes enjoyed by the Romans. He tells us how the roman meals were divided into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. He also tells us how the Roman chefs made use of many herbs and spices, including a few that will be familiar to modern cooks like bay, fennel and asafoetida. For the next few years, the families of Europe strove to serve up the best banquets, and consequentially chefs and their recipes were highly sought after. Notwithstanding that, it wasn`t until the 1800s that cookery and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, verifying, and publishing recipes to help cooks of their time. By the advent of the twentieth century, cookbooks were greatly in demand due to better eduction, increased leisure time and being a little richer. |
