3/4 cup skim or 2% milk
1 cup oatmeal, uncooked
1/2 cup vegetable oil
2 egg whites
1/2 cup brown sugar
1/2 tsp cinnamon
3 tsp baking powder
1 cup flour
1 tbsp grated orange zest
Directions
Peeled and chopped bits of apple, optional
Preheat oven to 400 F. Line 12 muffin cups with paper liners. Combine
and mix milk and oatmeal. Add oil and egg whites, sugar and spice and
zest. Stir until blended. Combine flour and baking powder, add to
mixture, along with apple bits and stir just until blended. Bake
15-18 minutes. Makes 12 muffins.

The History of Recipes
We are able to follow the history of written recipes way back into the distant past, in fact as far into history as early Egypt, and maybe further still. However, sadly, these old cookbooks were just very simple hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe found, according to Professor Solomon Katz, is a series of tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Later on, in The time of the roman empire around 25BC a man called Apicius assembled a number of documents showing how to cook the recipes cooked by wealthy roman citizens. In his scrolls, he describes how the meals of wealthy Romans were split into starters, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the Roman cooks were skilled in the use of many aromatic flavors, including some familiar names for example basil, rue and parsley. During the following few hundred years, the powerful families of Wesstern Europe strove to offer the most exotic meals, and as a result the best cooks and their recipe collections were highly sought after. Nevertheless, it was during the nineteenth century that fine cookery and cookery books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collating, trying out, and writing down the recipes of their peers. By the time we get to the 1900s, recipe books are greatly in demand mostly as a result of increased literacy, people having more leisure time and being a little richer. |
