The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions far back into ancient history, in fact as far back into recorded history as the Egypt of the Pharoahs, and possibly even further than that. Having said that, sadly, these old cookbooks were just very simple hieroglyphic recipes for food preparation.
Progressing into Roman times around 25BC a roman called Apicius created a number of documents which described recipes cooked by wealthy Romans. In his publication, he recounts how the meals were divided into hors d`oeuvres, entrees and desserts, something we still use today. This early Roman chef describes how the Roman cooks were skilled in the use of many different herbs, including a few that are still present in modern kitchens like basil, fennel and parsley. For the next few years, the families of Europe tried to serve up the most exotic meals, and consequentially chefs and their recipes became highly prized. Nevertheless, it wasn`t until the 1800s that fine cooking and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collating, verifying, and recording recipes that were common in the better off homes of the day. By the advent of the twentieth century, cookbooks were starting to become popular mostly as a result of better eduction, leisure time and disposable income. |
