The History of Recipes
Recipes as an idea can be tracked way back into history, certainly as far back into history as the Egypt of the Pharoahs, and maybe further still. Having said that, sadly, these early recipes were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the oldest recipe in existence, according to experts are a few stone tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. Progressing into Roman times 25BC a roman called Apicius compiled a collection of scripts detailing recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, main course and afters, a style of dining still practiced today. He also recounts how the cooks of his times were skilled in the use of many different spices, including many that are still in use today such as bay, mint and asafoetida. Later on, in the 15th century, knights returning from the crusades brought back a variety of foods and spices from Arab cooking, including basil and coriander. These new foods and spices created a torrent in cookery books, many of which still exist in academic collections. Over the succeeding few centuries, the rich and powerful families of Europe competed to serve the most extravagent banquests, and as a consequence, the best cooks and their recipe collections were highly sought after. Nevertheless, it wasn`t until the nineteenth century the formal cooking and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to collating, testing, and recording popular recipes of the day. The TV revolution brings us TV cooks and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes like those on this web site. |
