1 whole fryer
1 1/2 tsp salt
1/2 tsp cayenne pepper
1 tsp black pepper
1 tsp cinnamon
1 tsp allspice
Directions
Preheat oven to 325 degrees F. Clean chicken and cut into pieces.
Season well with spices, rubbing into surface. Bake, uncovered, 45
minutes to 1 hour or until done, basting occasionally with pan sauces.
We usually use this recipe with boneless, skinless pieces of
chicken such as thighs or breasts and adjust the cooking time

The History of Recipes
We are able to track the history of meal recipes way back into ancient history, in truth as far back as the early Egyptians, and possibly even further. Interesting though that is, mostly, these old cook books were just very basic pictorial recipes for preparing food.
The truth of the matter is, the most ancient recipe found, according to experts are some clay tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. As we move on, we have two interesting recipe books dating from the 1300s : a recipe book titled `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, they have no connection with the indian curry that we all know today, but instead recipes for the types of food on the menus of the rich and powerful of those days. Later, in the fifteenth century, knights returning from the crusades brought us many new spices and herbs from the Middle-East, such as basil and rosemary. These new foods and tastes led to an outbreak in books on cookery, the majority of which are kept safe in private libraries. During the following few hundred years, the rich families of Europe tried to offer the most exotic banquets, and as a result cooks and their collection of recipes became highly prized. However, it was during the 1800s that cookery and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, verifying, and publishing recipes to help cooks of their time. The arrival of television brought us celebrity TV chefs and the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes just like those on our web site. |
