The History of Recipes
It is quite feasible to prove the history of written cooking instructions back into history, certainly as far into history as the Egypt of the Pharoahs, and quite possibly further than that. In practice though, in the main part, these early cook books were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe in existence, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. As we move into The time of the romans 25BC a man called Apicius compiled a few documents describing recipes cooked by wealthy roman citizens. He describes how the meals of wealthy Romans were split into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. This early Roman chef recounts how the ancient Romans made use of a wide range of aromatic flavours, including many that are still in use today for example bay, mint and dill. Closer to modern times, there are a couple of interesting recipe books published in the fourteenth century : one book called `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these are nothing to do with the curry that is popular today, but rather descriptions of the types of meals served to the nobility of that time. Later, in the 15th century, the Crusaders brought back many foods and spices from Arab cooking, including spices like basil and rosemary. The introduction of these new tastes prompted an outbreak in manuscripts on food, many of which are now in academic collections. By the time we get to the twentieth century, cooking books were in high demand, as a result of more people being able to read, people having increased free time and being a little richer. |
