The History of Recipes
Academics have proved the existence of recipes way back into the distant past, in fact as far back into history as pharonic Egypt, and possibly even further than that. Having said that, mostly, these ancient records were just primitive pictorial recipes for preparing food.
The truth of the matter is, the most ancient recipe found, according to food historians is a series of ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful and exhilarated. As we move into Roman times 25BC a roman called Apicius created a collection of scripts which described recipes enjoyed by wealthy Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, something that is very familiar to us today. He also recounts how the early Romans made use of many aromatic flavors, including a few you will know such as bay, fennel and asafoetida. Moving on, there were a couple of interesting cookery books which were published in the fourteenth century - a book called `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the indian food that appears on menues today, but rather descriptions of the types of meals cooked for the nobility of the time. Later, in the 15th century, people returning from the crusades brought us many new foods and spices from the Middle-East, including coriander, parsley, and rosemary. These new foods and tastes prompted an outbreak in recipe publications, some of which still exist in academic collections. The revolution that is television gave us celebrity chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes like the ones you can find on sites such as this. |
