The History of Recipes
It is quite possible to trace the history of written cooking instructions back into the far past, in fact as far back into recorded history as the early Egyptians, and maybe even further. Interesting though that is, these, old cook books were just simple hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to academics is a series of ancient tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. As we move into Roman times around 25BC a man called Apicius created a few documents showing how to cook the recipes prepared by his fellow Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the cooks of his times were skilled in the use of many different spices, including a few that are still present in modern kitchens for example basil, fennel and dill. Moving on, we have a couple of books dating from the 1300s : a cookery book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Despite their titles, these books are nothing to do with the indian curry that is served today, but rather accounts of the types of meals prepared by the cooks of the rich and wealthy people of the time. Later, in the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from the holy land, including spices such as coriander, parsley, basil and rosemary. The introduction of these new culinary ideas created a surge in books on cooking, some of which still exist in private cookery archives. During the following few centuries, the rich families of Wesstern Europe strove to serve the best banquets, and consequentially chefs and their collection of recipes were at a premium. However, it wasn`t until the 1800s that fine cooking and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collating, testing, and recording recipes of the day. By the advent of the 1900s, cooking publications are starting to become popular due to better eduction, leisure time and having more disposable income. Like it or not, the introduction of TV brings us celebrity TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes like those on this web site. |
