The History of Recipes
Academics have proved the existence of recipes way back into history, at least as far into history as early Egypt, and maybe even further. Having said that, mostly, these ancient recipes were just very simple hieroglyphic instructions for meal preparation.
The truth of the matter is, the oldest recipe discovered, according to food historians is a series of ancient tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. As we move into Roman times 25BC a roman called Apicius wrote some documents detailing recipes enjoyed by the Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, a style of dining still practiced today. Aspicius also describes how the Roman cooks made use of a good variety of spices, including some familiar names such as bay, mint and asafoetida. As we move on, we find a couple of recipe books which appeared in the 14th Century ; a cookery book called `Forme of Cury`, and another named `Curye on Inglish`. Don`t be fooled by the titles though, these are not about the indian food that is popular today, but instead accounts of the types of meals served to the upper classes of the time. Later, in the fifteenth century, people returning from the crusades brought back a variety of foods and herbs from the holy lands, including rosemary and coriander. The introduction of these new foods and spices prompted a torrent in publications on food, many of which are kept safe in private cookery archives. During the next few centuries, the powerful and wealthy houses competed to serve up the most exotic meals, and consequentially the best cooks and their recipe collections were at a premium. Notwithstanding that, it wasn`t until the nineteenth century that fine cookery and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, testing, and writing down recipes for their fellow cooks to enjoy. By the advent of the 20th century, cook books are highly popular mostly as a result of better eduction, more leisure time and having more money to spend. The revolution that is television gave us TV cooks and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting us all to search through thousands of recipes such as those found on this recipe site. |
