The History of Recipes
Food historians have traced the existance of recipes far back into history, in truth as far into history as the early Egyptians, and possibly even further than that. In practice though, sadly, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the most ancient recipe in existence, according to food historians are some stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. As we move into The time of the romans 25BC a man called Apicius assembled some documents which described recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, main meal and desserts, something we still use today. Additionally, he tells us how the cooks of his times made use of many spices, including a few that will be familiar to modern cooks for example basil, mint and dill. Closer to modern times, there are a couple of interesting cookery books published in the 14th Century - a cookery book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Amusingly, these have no connection with the indian curry that is familiar to us all today, but instead accounts of the types of meals cooked for the nobility of the time. Later, in the 15th century, the Crusaders brought back many new foods and spices from middle-east cuisine, such as coriander, parsley, and basil. These new spices and herbs prompted an explosion in books on cookery, many of which are kept safe in private cookery archives. Like it or not, the introduction of TV brought us celebrity chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes like the ones you can find on this web site. |
