The History of Recipes
It is actually possible to trace the history of written recipes way back into the distant past, in fact as far as the early Egyptians, and maybe further still. Having said that, in the main part, these early cookbooks were just very simple hieroglyphic instructions for preparing meals.
In an interesting twist, the oldest recipe found, according to experts is a collection of ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. As we move into The time of the roman empire around 25BC a man called Apicius created a few documents describing recipes enjoyed by the Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the cooks of Roman times used many herbs, including some familiar names for example bay, mint and dill. Moving our culinary historical trip onwards, we have two interesting books dating from the 14th Century ; a recipe book entitled `Forme of Cury`, and another called `Curye on Inglish`. Although the titles sound familiar, these are not about the curry that is served today, but rather recipes for the types of meals on the menues of the rich and powerful of that period. In the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the East, such as parsley and basil. The introduction of these new herbs and spices prompted an increase in manuscripts on cooking, the majority of which still exist in private collections. Over the next few hundred years, the rich families of Wesstern Europe competed with each other to serve the best banquets, and as a result cooks and their recipe collections became highly prized. Even so, it wasn`t until the nineteenth century that cooking and cookery books really came of age. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collating, verifying, and writing down recipes common in their social group. When we get to the 1900s, cooking publications are in high demand, due to increased literacy, people having more free time and disposable income. The arrival of TV brings us cooking programs and the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes like the ones you can find on this web site. |
